  • 2 pints cherry or grape tomatoes

  • 1 block of Boursin cheese (about 7-8 ounces)

  • 1/3 cup extra virgin olive oil

  • 1/2 onion sliced thin

  • 3 garlic cloves, minced (optional but recommended)

  • 1/2 teaspoon seasoning of choice (adjust to taste)

  • Salt and black pepper, to taste

  • Handful of spinach (optional)

  • 10 ounces pasta (penne, fusilli, or spaghetti work great)

  • 1/4 cup fresh basil leaves, chopped

Instructions

Step 1: Prep and Bake

  1. Preheat your oven to 400°F (200°C).

  2. In a baking dish, add the cherry tomatoes. Drizzle with olive oil and season generously with salt, black pepper, and red pepper flakes. Toss to coat evenly.

  3. Nestle the block of boursin cheese in the center of the tomatoes. Drizzle a bit more olive oil over the top of the feta.




Step 2: Bake the Magic

  1. Bake for 30-35 minutes, or until the tomatoes are bursting, and the feta is soft and golden on the edges.

Step 3: Cook the Pasta

  1. While the feta and tomatoes are baking, cook your pasta in a large pot of salted boiling water according to package instructions. Reserve about 1/2 cup of pasta water before draining.

Step 4: Bring It Together

  1. Remove the baking dish from the oven. Add the minced garlic (if using) and stir everything together until the cheese and tomatoes form a creamy sauce.

  2. Add the cooked pasta to the dish, tossing to coat. If the sauce feels too thick, add a splash of the reserved pasta water until you reach your desired consistency.
